These scalloped potatoes work great as a simple, delicious and nutritious lunch menu idea for children and families.
*Cheddar cheese gives scalloped potatoes a beautiful golden color and a savory, rich flavor.
Ingredients Needed:
- 4 large potatoes, pared
1/4 cup water
1/2 tsp. salt
3 Tbs. butter or margarine
3 Tbs. all-purpose flour
1 3/4 cups milk
2 cups shredded Cheddar cheese
1 tsp. salt
1 clove garlic, minced
1/2 cup buttered bread crumbs
Directions:
Slice potatoes about 1/4-inch thick. Place into heavy saucepan with the water and salt. Cover tightly. Bring to a boil. Reduce heat and cook for 15 minutes.
Meanwhile, melt butter in heavy saucepan. Stir in the flour. Gradually add milk. Bring to a boil, stirring constantly. Cook until sauce is thickened. Remove from heat and stir in cheese, salt and garlic.
Fold sauce into potatoes. Turn into buttered 1 1/2 quart baking dish. Top with buttered crumbs.
Bake at 375 degrees for 45 minutes or until mixture is bubbly and top is slightly browned.
Comments:

Easy Cheesy Garlic Bread – Preschool Lunch Idea
Do you love garlic bread? Do you hate it when you run out of garlic spread? If you have these ingredients on hand you will never go without garlic bread again.
What You Need for this lunch Idea:
- Knife
- Spoon
- Butter
- Garlic and Herb seasoning
- Garlic Salt
- Shredded Cheddar Cheese
- Tin Foil
- Baking sheet
- Soft buns (any kind) As many as you think will be enough for your family.
What To Do for this Recipe:
With the knife, cut the buns in half.
In a small bowl put some butter in it (as much butter as you think will be enough to spread each side of the buns) Sprinkle some of the seasoning on the butter and stir until seasoned to your liking.
Add about 3 or 4 shakes of Garlic Salt just on top and stir in as well.
Spread the mixture on the cut buns. Place the tin foil on the baking sheet and put the buns on top butter side up (of course).
Put shredded cheese on top of buns.
Place in 400 degree F oven until toasted.
Check every 10 minutes.
If you like the tops browned, you can broil them for a few minutes when toasted, watching constantly until done.
